About this release
Once again, we went looking for inspiration in the vast warehouses of drinks giant Diageo, focusing on whiskies matured in bourbon casks. Finding the right cask was no easy task, for two reasons. Most of this distillery’s production is reserved for its flagship whisky, Johnnie Walker. You may also remember Dailuaine as a single malt in last year’s Diageo Special Releases.
The second challenge was the distillery’s versatility: depending on what is needed, it can produce spirit with very different profiles. Dailuaine can, in a sense, “imitate” many other distilleries in Diageo’s portfolio. Our aim was to find the style we enjoy most: a waxy Dailuaine, prized by blenders as a substitute for the famous Clynelish. We found just one cask that met our expectations: a 2011 refill bourbon hogshead. It has wonderful potential for further maturation, while already being at the perfect stage for another Daily Collection release. It is now the oldest whisky in the series.
Notka degustacyjna
Nos
Buttery shortbread, a hint of varnish, wildflower honey and a freshly baked yeast bun with vanilla custard. It turns pleasantly waxy with time, followed by the aroma of hot chocolate.
Taste
It gradually thickens on the tongue. Buckwheat honey takes the lead — or perhaps beeswax? Then come juicy peaches in syrup, milk chocolate and vanilla custard melting across the palate.
Finish
Long and oily, a warming treat of wax and honey.
